The Canopy manual does not say anything about the DiffServe Configuration section.
Can some body tell me how this part works ?

Diff serve is not Canopy specific, it is a standard and a google will give you a deeper insight on Diff Serve.
However the above release notes give a good explanation accompanied by an example
