Can someone educate me how this “gpon lastmile” work on epmp425? Whats the advantage of using sfp over the regular poe as data?

You buy a special GPON module for the SFP connector. You configure it at the operator’s or yourself.
You insert the module into the master AP and you have the GPON extension

It mainly depends on what equipment your fiber optic network provider is running on. Ask him which manufacturer and what inserts they recommend (because they use them).
There are many manufacturers in the open market, the price is around $100
